Roaster Notes:
To have a blend that delivers cherries and winey notes, I picked natural process with slightly more fermented coffee and balance with a traditional washed coffee. This coffee delivers acceptable acidity that promotes berries notes, and offer a rich layer of mouthfeel that feels like dessert (especially when you have it in milk coffee). When the coffee cools down, it taste very winey and also chocolatey at the same time. In the milk, my friend say it's like a tiramisu.
Our recommended brewing recipe:
Temperature: 88 Celcius
Grind Size: Medium Coarse (Comandante 28 click).
Time of Brewing: 2.5 Minutes.
Espresso Brewing Recipe:
Temperature: 93 Celcius
Shot Time: 20-25 Seconds.
Ratio: 1 : 2 (16g : 32g)
Recommended Pressure Bar: 7-9 bar
Recommended Preinfuse Time: 0-2 second
